Sheet-Pan Gnocchi with Sausage and Peppers
This is the dinner we make when the idea of boiling water feels like a whole project. Everything goes on one tray, the oven does the work, and nobody has to watch a pot.

Why this works for an ADHD brain
- Shelf-stable gnocchi lives in the pantry for months, so it is there on the night you forgot to shop.
- Precooked sausage means there is no raw-meat timing to get wrong.
- The oven timer holds the time for you, which matters when time blindness is part of the evening.
Ingredients
- 1 package (16–17.5 oz)shelf-stable potato gnocchi(do not boil it)
- 12 ozprecooked chicken or pork sausage(sliced into coins)
- 2bell peppers(or 3 cups frozen pepper strips)
- 1red onion(or 1 cup frozen diced onion)
- 2 tbspolive oil
- 1 tspItalian seasoning
- to tastesalt and black pepper
Steps
- 1
Heat the oven to 425°F. Line the sheet pan with parchment if you want almost nothing to wash.
- 2
Tip the gnocchi, sausage, peppers and onion straight onto the pan.
- 3
Drizzle with the oil, sprinkle the seasoning, salt and pepper, and toss with your hands.
- 4
Spread everything out in one layer and roast for 20–25 minutes, stirring once halfway, until the gnocchi are golden at the edges.
Where this usually stalls
Chopping the peppers and onion.
Use frozen pepper strips and frozen diced onion. They go on the pan straight from the bag and roast fine.
Even lazier version
Skip the vegetables entirely: gnocchi plus sausage plus oil, same oven time, and a bag of salad on the side straight from the bag.
Easy swaps
- Vegetarian: swap the sausage for a drained can of chickpeas.
- Add a handful of cherry tomatoes for the last 10 minutes.
- Finish with a spoon of jarred pesto or grated parmesan.
Leftovers
Keeps 3–4 days in the fridge. Reheat in a hot pan or the air fryer; the microwave makes gnocchi soft.
Frequently asked questions
Do you have to boil shelf-stable gnocchi before roasting it?
No. Shelf-stable potato gnocchi roasts straight from the package. In a 425°F oven it turns crisp outside and soft inside in about 20–25 minutes.
Can I use frozen gnocchi?
Yes, but roast it from frozen with an extra 5 minutes and give the pan more room, because frozen gnocchi releases water and steams if it is crowded.
