5-Ingredient Black Bean Quesadillas

Quesadillas are our default for the evenings when the plan fell apart at 6:40 p.m. Everything in it keeps for weeks, so it is the one dinner that is almost always possible.

Why this works for an ADHD brain

  • Every ingredient is shelf-stable or keeps for weeks, so it survives a missed grocery run.
  • No chopping at all, which removes the step that most often stops a tired cook.
  • It is done in under ten minutes, short enough to start before the decision fatigue wins.

Ingredients

  • 4large flour tortillas
  • 1 can (15 oz)black beans(drained and rinsed)
  • 1½ cupsshredded Mexican-blend cheese
  • ½ cupjarred salsa(plus more for dipping)
  • ½ tspground cumin or taco seasoning(optional)

Steps

  1. 1

Mash the beans roughly with a fork in a bowl and stir in the salsa and cumin.

  2. 2

Spread the beans over half of each tortilla, add a handful of cheese and fold it over.

  3. 3

Cook in a dry skillet over medium heat for 2–3 minutes per side, until golden and the cheese has melted.

  4. 4

Cut into wedges and serve with extra salsa.

Where this usually stalls

Flipping and watching the pan.

Make one giant quesadilla on a sheet pan instead: tortillas topped and folded, 425°F for 8–10 minutes, no flipping.

Even lazier version

Beans, salsa and cheese in a bowl, microwaved for 90 seconds and scooped up with tortilla chips.

Easy swaps

  • Stir a handful of frozen corn into the beans.
  • Add leftover rotisserie chicken if you have it.
  • Serve with a squeeze of lime and a spoon of Greek yogurt instead of sour cream.

Leftovers

Best eaten fresh. The bean filling keeps 4 days in the fridge, ready for tomorrow's batch.

Frequently asked questions

Do I need oil to make quesadillas?

No. A dry nonstick skillet over medium heat crisps flour tortillas well. A little butter or oil gives a more golden finish but it is optional.

Can I make these ahead?

Make the bean filling ahead and keep it in the fridge for up to 4 days. Assemble and cook the quesadillas fresh, since they turn soggy when stored.
