No-Cook Rotisserie Chicken Burrito Bowls

A rotisserie chicken is the closest thing we have found to a dinner someone else made. Pull it apart, open a few cans, and everyone builds their own bowl.

Why this works for an ADHD brain

  • Nothing to cook except a rice pouch in the microwave.
  • Build-your-own means nobody negotiates what goes in, which removes a decision you would otherwise make for everyone.
  • One chicken covers this dinner and tomorrow's lunch.

Ingredients

  • 1store-bought rotisserie chicken(about 3 cups shredded)
  • 2 pouches (8.5 oz each)microwave rice
  • 1 can (15 oz)black or pinto beans(drained and rinsed)
  • 1 cupjarred salsa
  • 1 cupshredded cheese
  • 1 bagshredded lettuce
  • 2 cupssingle-serve guacamole or 1 avocado(optional)
  • 1lime, in wedges(optional)

Steps

  1. 1

Microwave the rice pouches according to the package.

  2. 2

Shred the chicken with two forks or your hands while the rice heats.

  3. 3

Set out the rice, chicken, beans, salsa, cheese, lettuce and guacamole.

  4. 4

Everyone builds a bowl and adds lime on top.

Where this usually stalls

Shredding a whole hot chicken.

Buy pre-shredded rotisserie chicken (many stores sell it in tubs next to the whole birds), or shred it when it is cool and keep it for the week.

Even lazier version

Chicken, rice and salsa only, eaten from one bowl. Still a full dinner.

Easy swaps

  • Use canned corn or a jar of pickled jalapeños for crunch.
  • Swap rice for a bag of tortilla chips and call it nachos-in-a-bowl.
  • Vegetarian: double the beans and skip the chicken.

Leftovers

Store the parts separately and assemble fresh. Shredded chicken keeps 3–4 days in the fridge.

Frequently asked questions

How long does rotisserie chicken last in the fridge?

About 3–4 days once it is home and refrigerated. Get it into the fridge within two hours of buying it.

Can I meal prep burrito bowls?

Yes. Pack rice, chicken and beans together, and keep salsa, lettuce and guacamole separate until you eat so nothing goes soggy.
